when the mountain seems too high

This past week was a rough one. I came across this great scripture just in the nick of time.

I was recovering from surgery and finding it more difficult than I had expected. I developed a complication that made me wonder if I was going to make it. I also found myself wondering why so much suffering is a part of this existence we call life.

Then, this beautiful verse jumped out of my book.

“God…has created you, and has kept and preserved you,…and is preserving you from day to day, by lending you breath, that ye may live and move and do according to your own will, and even supporting you from one moment to another.” Mosiah 2:20-21

Today, I am grateful that there are little messages written and hidden in the scriptures just for you and me. Messages that bring us hope in dark moments.

This week, my wish for you is that as you read and study from the good book, something wonderful and magical can jump out to bless your life as it did mine when I needed it most.

Our favorite sunday rolls

Yup, we make these just about every Sunday.  The reason we love them is not only that they are delicious but you can leave the dough ready the day before.

Simply mix all the ingredients together with an electric mixer in a bowl.  This batter will rise so make sure the bowl is big enough.

Here is what you will need:

1 tablespoon dry active yeast

2 cups warm water

1 ½ sticks of butter, melted

¼ cup sugar

4 cups flour

1 tsp. salt

Mix well with electric mixer, cover with plastic wrap and refrigerate overnight.

Just before dinner, spoon dough batter into well oiled cupcake pan.

Sprinkle with cheddar or parmesan cheese.

Bake at 350 for about 15 minutes.

So easy and yummy!

Easter message

Last Saturday I took a long walk with my husband.  We enjoy a trail near our home that runs alongside a river that comes out of a nearby canyon.  In summer, the water is high and its sound is powerful.  In winter, the river is dry, the bottom of this river is filled with boulders of all sizes. It is so quiet when the water is not running, we can hear birds singing all around us as we enjoy quiet conversations.  

On this particular morning, my husband stopped and said “Do you hear that? It’s water.” We looked at the dry river bottom and saw a small trickling of clear, sparkling water.  It was the beginning of the spring runoff just barely making its way down the riverbed.  

We both agreed that this was maybe a once in a lifetime opportunity and followed the tiny trickling of water for a while.  The rocks seemed to come to life as the water surrounded them, ultimately filling every crevice.

As we walked up the river the water became more powerful and louder.

I love to watch as spring approaches and everything starts to come alive again, from buds on trees to flowing rivers.

I can’t help but to think of Christ.  He who is the “fountain of living waters”.  The one person who we can rely on for security and spiritual life and power.

The scriptures are filled with people who ignored truth and turned to idolatrous sources for security, they chose to live in a drought, ignoring the living spring that provides the way to happiness.

The true source of living water – The Lord Jesus Christ.

This Easter season, may we all feel the joy of new beginnings, of hope eternal, and take a moment to give thanks for Him who died to save mankind and rose that we may live.

3 tips to a healthier you this spring

Spring Is right around the corner, which means the much anticipated Spring Break will be here before we know it too! Whether you are headed to a cruise in the Bahamas with your friends or family, a beach in Mexico with the girlfriends from school, or a California Adventure trip with the kids, there are a few wellness basics that you want to start incorporating now to get your body and mind ready for the trip so your energy stays high, your health stays healthy, and you stay happy both pre and post vacation! Here are my top 3 wellness tips for getting Spring Break ready:

1. Stay Alcohol Free to Feel Great.
Chronic use of alcoholic beverages suppresses the body’s immune response to infection by 30%. The liver receives alcohol as a toxin. When you consume alcohol with a meal, your liver works on breaking down and flushing the alcohol first, leaving the breakdown of food nutrients to its second priority. This means your body burns empty calories for energy before nutrient rich calories, and when your body really needs the energy from food nutrients, the body has already stored them as fat. Repeatedly doing this will definitely lead to weight gain and weaken your body’s ability to fight off infection and stay healthy so you can enjoy the vacation. Limit your alcohol intake leading up to Spring Break, and then savor your drink of choice slowly with your family and friends at night with a meal, followed by lots of water to help your liver flush out the alcohol. This will keep your body healthy, your mind clear to enjoy your days, and your weight on track. Going over-board on the drinking at dinner will only make for bad headaches in the morning-so keep it light.

2. Workout With A Friend Leading up to Spring Break
Ask a friend to work out with you at the same time everyday and put a reminder alert in your phone to workout at least 3 times/week for 35-45 minutes a day to help you stay committed. Having someone else depending on you to keep them motivated can make you more accountable to show up and perform. If you are at a hotel, resort or on a cruise ship, you should have access to a fitness facility, and getting in at least 3 workouts on your 7-8 day vacation, will definitely help you feel in control and confident of your fitness goals and keep you positive about your pre-break workout continuing in post-break life!

3. Pack Your Diet With Protein and Superfoods
Protein and superfoods are the nutrients that your body will not only need, but crave while you’re busy enjoying the Spring fun! Protein gives us healthy energy for muscle repair, and superfoods pack a punch when it comes to boosting immunity and keeping our digestive system working properly-which you will definitely want to do, so you can enjoy your break with less bloating and gas, and more feeling great!.

Protein is a macro-nutrient that our body doesn’t store, so we have to continuously feed it to our cells in large amounts to remain healthy. Our hair, skin cells, bones, cartilage, and blood are largely made of protein and our large muscles and tissues are repaired by protein. Protein also creates hormones, enzymes and important stabilizing chemicals, and without it we can see large negative changes in overall health and wellness. So, to help keep you balanced for your upcoming trip, I suggest incorporating the following great protein sources into your daily diet: chicken, salmon, almonds, oatmeal and egg whites.

Superfoods, high in nutrients and low in calories, are also a major player in balancing your body’s endocrine system, which directs your cells where to carry nutrients to. If you are stressed out while trying to prepare for a big trip, then you want to make sure that your endocrine system is as balanced as possible, so you can power through your preparation like a superhero! I suggest getting as many of these superfoods into your daily diet as you can: Blueberries, Blackberries, Raspberries, Coconut Oil, Kale, Spinach, Broccoli, Egg-whites, Legumes and Almonds/Cashews.

An easy way to get your superfoods, protein needs and daily hydration is to make this easy powerful organic OM POWER protein shake from the Meals That Transform Kitchen. I recommend it to all women juggling crazy schedules, especially preparing for vacation:

Ingredients

Pre & Post workout Smoothie

Pre-workout smoothies are all about having carbs for fast energy, proteins to help your muscles get ready, and good fats to prepare your body for a workout.  The great thing about having a smoothie before you exercise, is so your body can process the nutrients faster because it doesn’t have to break down the smoothie very much.  This = fast energy! Consume 30-40 minutes before you exercise.

If you are like me and prefer just fruit and veggies in your smoothie, you can get your carbs by having a slice of wheat toast to go along with your smoothie.  

The Green Smoothie

2 cups spinach

2 cups almond milk

1 large apple, cored

1 banana

1/3 cup rolled oats

1 TBS coconut oil

1/2 tsp ground cinnamon

Directions: Bend it all together.

Mango & Coconut Water Smoothie

1 cup coconut water ice cubes

1/2 fresh mangos

1/4 cup orange juice

1/4 cup coconut water (coconut milk is also yummy)

Post-workout smoothies are meant to repair and build muscle.  So you will want to add more protein here and less carbs.  The protein is the key ingredient, so your workouts can be more beneficial.  Try to have these within 30 minutes of your workout for maximum absorption.

Peanut Butter Smoothie

3 TBS peanut butter

1 frozen banana

3/4 cup milk

1/3 cup vanilla greek yogurt

1 scoop Chocolate protein powder

Directions: Blend it together.  If it is too thick add more milk.

Chocolate Raspberry Almond Butter Protein Shake

2 cup chocolate almond milk

1 scoop chocolate protein powder

3/4 cup frozen raspberries

1/2 of a frozen banana

1 spoonful of almond butter

We want to start Health & Fitness week by introducing you to a new workout that has people going crazy and finding a new love for fitness. HIGH Fitness was started by co-founders Amber Zenith and Emily Nelson. They created a high intensity, choreographed workout to your favorite pop songs that creates a fun atmosphere and has people going back again and again. HIGH Fitness took off in 2014 and now has over 160 instructors in 2 countries and over 15 states.

This week we visited Plates & Palates in Bountiful for an incredible lunch we won’t forget. We have to share them with you today, it was that good! Plates & Palates has been open for 12 years and loved by everyone that visits.  People line up at lunch time to eat there and we learned quickly why; the menu is to die for!

We ate a Pear Pecan Salad with crispy bacon and pecans that tasted like candy… they were incredible.  We also ate a Mediterranean Panini full of artichoke hearts, feta, roasted bell peppers, salami & provolone (is your mouth watering yet?).  If that wasn’t enough we finished with their famous Coconut Cake that is both heavenly and addicting, we won’t get through the weekend without heading back for more.   (Well, we may have eaten a few more desserts and they were delicious) Like their very original Wild Rice Pudding with fresh mangos and crushed pistachios, this one was a hit!  And the Salted Caramel Chocolate Cheesecake finished our lunch with a touch of perfection.

If you live in Salt Lake, it is definitely worth the drive just to try the coconut cake, no… the salted caramel chocolate cheesecake, no… the pear pecan salad, no… the rice pudding (which is a Plates & Palates original)… ok, let’s just say it’s worth the drive.  I promise you won’t be disappointed, in fact, it will probably become your go to date night or lunch spot.
