Heber City & Midway, Get There!

These close cities are two of our favorite places to escape to year round. The scenery, the hikes, and the fishing are just a start. There is so much to do.

  • We love to stay at the Zermatt Resort where the kids can ride a beautiful merry-go-round. Swim in an indoor and outdoor pool that has a tunnel connecting them, the kids just love it.  There’s also mini golf and a giant chess set, not to mention beautiful lounging space to look at the night sky that seems to have exploded with stars.
  • The Heber Railroad train is super fun.  Take themed rides all year and for different holidays.  The whole family will love it.
  • The golf courses are a favorite of all the men in our family.
  • There is great horse back riding in some of the most beautiful places in Utah.
  • Charming boutiques along Main Street Heber city and remember to take home a June Pie… to. die. for.
  • The giant Midway Crater deep below the ground is a warm swimming hole, love.
  • Heber Valley Dairy has cheeses that are so good and the ice cream is a must.
  • Boating at Deer Creek & Jordanelle are local favorites.

Getaway for a weekend or just load up the kids and visit for the day… another reason that we love Heber & Midway.

Vernal, the city of flowers

Vernal was just named in the top 20 cities in the US that are a must visit.  We couldn’t agree more and here’s why.

  • Our family favorite because of the Green River. Going down in rafts is incredible, the cliffs above are breathtaking and the water so clear that you can see the trout swim right up to your boat. Fishing is a must!  The Green River is now part of the National Fly Fishing Association and people come from all over the world to fish.
  • We love to stop by the Dinosaur Museum which the kids look forward to the most.  It has just been rebuilt and new.
  • National Dinosaur Park is full of dinosaur bones and an active archaeological dig site.  The kids will be in heaven.
  • Don’t miss the charming shops like Vernal Floral and The Galleries.
  • The warmth of the people of this town is simply wonderful.
  • Vernal is known as the “city of flowers” because of the thousands of flowers that line main street as you enter.  It is stunning to see.
  • McCoy Flates & Flume Trails are new mountain biking trails.  If you like biking then you can’t miss these new groups of trails.
  • Water sports galore with 3 surrounding bodies of water including Flaming gorge.
  • Camping at it’s most beautiful for those that love the outdoors.

You will most definitely want to go back after you’ve visited.  Just 3 short hours from Salt Lake makes this a getaway to be repeated.

Moab, a must see

We are heading there this summer. Yes, it will be hot but we don’t care, we love this place so much!

Why?

  • The biking is out of this world, though some of us go for the excellent food and the relaxation. (Milt’s Burgers & Shakes…. a must)
  • The art galleries are a favorite year-round.
  • With its two impressive national parks, Moab should be on your list of places to visit. The warmth and hospitality of this city makes it one of our favorite places.
  •  Left Hand Fork:  Hike to some awesome swimming holes!
  • River Rafting:  All levels of experience and so much fun.  You can’t visit without floating down the river.
  • Did you know that there are some hidden trails and amazing adventures that you can only do with a guide?  Well, visit Moab Adventure Center and they will show you all the hidden places that are breathtaking.

Have You Visited Sugar House Recently?

Sugar House is one of Salt Lake’s oldest neighborhoods. Its quiet residential neighborhoods lined with trees and history give it a charm like no other place.

The thriving business district along with the 110-acre Sugar House Park is a draw on its own.  Make sure you walk the hidden trail leading from the park tunnel to the heart of Sugar House.

Just drive down 2100 South and you will run into a whole new shopping and eating district that you are sure to love!

This place is booming with new and beautiful residential developments, places to eat and shop with a plaza complete with a splash pad for the kids to enjoy on a hot summer night.

We went there on a busy Friday night afraid that we would not get into any restaurant without a reservation, but much to our surprise, we walked right into the new Wasatch Brewery which was packed with customers but because it’s so big, we were able to get a table quickly. The food was delicious and the service wonderful!

Head over to one of the many new places in Sugar House and enjoy this charming Salt Lake neighborhood.

Tips for Healthy Eating

We are on a health kick. It happens from time to time. So the girls and I made a list of healthy foods to have on hand. We even decided to give organic a try, which can get expensive. We did some shopping around and were surprised to find that Sprouts has very good prices of all their produce. So good in fact, that it’s our new weekly go to place for fresh produce.

Here is a list of some basics to have in the fridge and pantry:

Raw almonds – (with skins) Great to snack on when you get hungry. A 1-ounce serving, about 25 almonds, provides 3 grams of fiber, 6 grams of protein, 35 percent of the daily value for vitamin E, as well as magnesium, calcium and iron and B vitamins. No wonder almonds have heart healthy benefits.

Green apples – organic. They give you energy, dietary fiber, full of all kinds of antioxidants. They contain both tartaric as well as maleic acid, thereby helping to reduce the chances of indigestion. Green apples are simply better.

Beets (yellow and red) – Boil for about 35-40 minutes in plenty of water. Peel and keep in a container in the fridge, don’t chop them up, store the beets whole, just use as you need it. They stay fresh for over a week and are ready to use in salads, so yummy! Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function).

Eggs – From free range chickens. Put 6 eggs in boiling water for 12-14 minutes. Remove from pot and place them in a bowl of cold water. Wait 10 minutes and peel. Keep them in a container in the fridge so they are ready anytime to add to a salad, make a quick egg salad sandwich or some deviled eggs.

Lemon Cucumber Water – Fill a glass pitcher with water and add a few slices of cucumbers and lemons. You will drink more water because it tastes so refreshing.

The Cake Supplies You Need to Bake Like a Pro

My husband recently asked me what my hobbies were, what I enjoy…. I don’t know, I take care of kids, clean and do an amazing amount of laundry and so I guess I enjoy grocery shopping alone and locking myself in the bathroom for a long, hot shower 😉  He sure has a lot of hobbies though (most of which are expensive… but that’s a topic for another time!).

I guess it got me thinking about the things I love to do.  One of those is cake baking and decorating.  I used to have a little cupcake counter in my retail shop and I sure enjoyed it, but never baked big fancy cakes.  So I signed up for a cake class with Cake by Courtney and LOVED it!  That’s the Churro Cake in the photo above, it is one delicious cake.   The main question at the class from attendees was, “What supplies are needed to start baking and decorating cakes like a pro?”  I took notes and found all those supplies, with most on sale!  Click the affiliate links below to see these tools and great prices. The best part is that you can shop from home while in your pjs.  Enjoy!

  1.  For the Naked cake look:  Acetate Sheets.  Love the look of these cakes!  Here are sheets, and here is a 3″roll.
  2. 6″ cake ring (cuts a sheet cake like a cookie cutter for layered cakes)
  3. 1/4 sheet pan:  Courtney used this to bake and create a Milk Bar cake… next to try on my list.
  4. Parchment Paper:  I love how Courtney taught to spray or butter pans, line with parchment paper and spray again.  Cakes come out so smoothly.
  5. Pallet Knives:  This set comes highly recommended and also this Wilton Pallet Knife.
  6. Metal cake scraper:  This gives your frosted cake that smooth look.
  7. Spinning Cake Stand:  Courtney recommends and uses the Cake Boss Spinning Cake Stand.  I will need to build up to buying that beauty, so I am trying this one that is also great for beginners.
  8. Cake lifting tool:  This helps you move your cake from the cake spinner to your serving plate.
  9. Use gels to color your frosting.  These come recommended for the best color and uses a lot less color than regular food coloring.
  10. Disposable pastry bags.  Love that there’s less mess when using these piping bags and you get 100 for $10!
  11. Cake Level.  This is what makes those cakes look oh so perfect!
  12. Decorating tips.  You’ll probably find and use your favorites, but if you aren’t sure, here’s a great group of tips to play with that I really like.
  13. Cake Pans:  6″ round, 7″ round and 8″ round. Most cake recipes that I’ve been working on need 3 pans of each size.  I like these pans and they’ve worked great for me.

Sometimes you just need to breathe

This week I realized that Calm is a superpower that I may not possess.

Allergies run rampant in this family and I got to witness two people in distress all in one week.

I was at a birthday lunch at a lovely restaurant overlooking beautiful Salt Lake with family, when my nephew Jake started going quite pale. He put down his sandwich and announced that he was having an allergic reaction to something. We immediately asked the waitress if there was any way that nuts were in the sandwich. She got the manager who let us know that yes, walnuts are in the spread used in the sandwich. Jake quickly stood up to run across the street to a pharmacy to get the help he needed.

That same week my husband Bob and I were visiting a church where a friend was speaking. As the sacrament tray came around, we partook of the bread as we do each week. This particular bread had sunflower seeds in it. Bob quickly realized that he was in trouble and stood up and walked out to take care of things.

I’m pretty sure that if my throat started closing up and I was unable to breathe normally, I would panic.

Jake and Bob both remained calm.

Mark Twain once said, “Courage is not the absence of fear, it is the ability to control it.”

From watching these two brave men, I learned that when faced with an emergency survival situation, we may not want to panic, panicking affects our ability to think critically and exercise good judgment.

This week, in all you do, and all situations you are asked to face, I hope you and I can remember that we have the ability to do hard, scary, and difficult things that are all part of this life experience.

Did you know you can visit the La Caille grounds?

We decided to call and find out if we could walk around the grounds at La Caille and the answer was YES!  La Caille is a fancy, gorgeous french restaurant nestled up against Little Cottonwood canyon.  Its grounds are loved by photographers and when you visit, you feel like you are in a far away country in Europe. The restaurant is amazing and the food exquisite, not to mention their special events, wine tastings from their own vineyard and incredible weddings.  We visited before the flowers were planted and it was still as beautiful as can be.

But did you know that along with all those things, they let you come stroll the grounds in the day time?  So we headed over and the kids were in complete heaven.  It’s quiet, beautiful and has gorgeous peacocks, ducks, geese and swans that walked right up to the children.  When we got there, my two year old said, “Mom, can we go in the enchanted garden?”  First you have to know that this child is Sofia the First obsessed and La Caille was exactly what she thought Sofia’s enchanted garden would look like.

La Caille is a private business so here are some things to keep in mind when visiting:

  • Don’t feed the birds.  They are peaceful and will love you even without food.
  • It is well maintained so stay on the paths and keep little ones close.
  • There are lots of steps so I’d say, no strollers.
  • No food.  Keep the grounds clean. No picnics allowed.
  • One fun idea if you’re feeling adventurous is to park across the street at the trailhead on Wasatch BLVD and walk in.  It gets a bit steep but it is incredible to look at the ponds, huge trees and nature.
  • Take a camera!  There are so many beautiful places to capture photos. (Professional photography needs to be inquired about before hand with La Caille.)
  • Open to the public ends at 5:00 p.m. This is when the restaurant opens so make this a morning or early afternoon trip.

How Effective Are You As a Parent?

Our first duty as a parent is to give our children the tools they need to build a successful life. Here are 10 rules for effective parenting from Bill O’Reilly that we loved! See how you are doing.

  1. A parent who is looking out for a child will make time for the child.
  1. Discipline is essential, but no parent should inflict physical or mental pain on a child. Parents have to be patient and remember that words can deeply wound a child.
  1. A good parent will ensure that home is a refuge. A place where a child feels protected and loved. There will be no random violence, intoxication, sexual displays, uncontrolled anger or vile language at home.
  1. A parent who is looking out for a child will provide a good education. That includes paying college tuition, if possible. Education comes before the vacation or the new car.
  1. An effective parent will be available when a child has a problem. Ditch the meeting, get back from the mall, get off the phone. There is nothing more important than dealing with a child’s crisis immediately.
  1. A good parent will screen a child’s friends, know his or her whereabouts, look at homework and ask questions about school daily.
  1. An effective parent will enforce the rules and explain them.
  1. A parent who is looking out for a child will be honest and lead by example: No lying, no cheating, no nasty gossip, no cruelty, no manipulation, no envy of your child.
  1. A good parent will be respectful of his or her own parents.
  1. Finally, an effective parent will not allow a TV or computer in a child’s room. This is a dangerous world, and the danger is now inside the house. The exploiters want your kids. You must look out for them. Fight hard.
