Time to get away to Capitol Reef

A little piece of heaven is waiting and it’s just 3 hours away from Salt Lake.

Last week we visited wonderful Capitol Reef, took the scenic highway with it’s stunning vistas, hiked to marvelous destinations and relaxed at Capitol Reef Resort in their beautiful and super comfortable rooms.

Did you know you can even stay in a teepee complete with king size bed, flat screen TV, sitting area, and full a private bathroom just a few feet away? We stayed in a comfortable and well decorated room but next time we go it will be a teepee!

A delicious pioneer breakfast buffet is included if you choose that option and the service was great.

For dinner we visited Café Diablo, I highly recommend it. The food was so incredibly delicious that you have to make sure you experience it. Café Diablo is under the ownership of a friendly former cowboy from Philadelphia who loved Utah so much he made it his home. He greeted us dressed in shirt and tie, made excellent recommendations, took our order and served us our wonderful meals. This unique restaurant even grows it’s own organic greens, everything is fresh and tastes out of this world.

Make sure you try the avocado chips, deep fried avocado that has been breaded and cooked to perfection.  The dip is a cheese sauce that perfectly compliments the avocado.

Take a moment to see the local art that hangs throughout the cafe. I loved this hand carved wood piece.

Don’t forget to visit the little town of Fruita nearby, it’s charming and full of history.

As we drove in, we were greeted by a heard of deer, a flock of wild turkey and the friendliest of people. Stop by the visitor center for a short video presentation, walk through the fruit orchards and pick some fruit to take home. We were there too early in the season but the trees were blossoming and it was beautiful.

The little country store sells really yummy ice cream that we had to try, as well as gifts and souvenirs. Make sure you stop by the barn across the street to pet the horses and drive to the original one room school house, peek inside, it’s sweet.

On that same road just a skip away you can see petroglyphs left by the Fremont culture, which existed in areas of Utah from approximately AD 600 to 1300.

You KNEAD a Kneaders pastry

This past week we had the opportunity to take a pastry class from none other than Monica Kate, executive head pastry chef for Kneaders Bakery & Cafe.

We met up with some of our blogger friends and had a super fun group there as we attempted to learn to make delicious puff pastry.  The best part is that they have allowed us to share their own recipe with all of our Salt Sky friends!

Here are some fun facts about Kneaders and why we love them:

Kneaders is celebrating 20 years in business; they started with a small store in Orem and have grown to 57 stores in 6 states.

They are a “from scratch bakery” and make 42 different types of pastries daily by starting as early as 4:00 am.

Their kitchen’s high sanitation standards are impressive, everything is sanitized every 2 hours!

When we were there, the bread chef had 400 pounds of dough rising.  Some days they make up to 1000 pounds.  You better believe that they sell out of their delicious bread daily.

We love that this very successful business was started by a husband and wife team with a dream.

Visit them today and you will see for yourself why they are so unique and create such wonderful food.

PATE A CHOUX (pronounced Pat a Shoe)

Kneaders Puff Pastry recipe

1 cup water

1 cup milk

1 cup butter

1 tsp. sugar

1 tsp. salt

1 ¼ cup flour

10 eggs whisked

  1. Bring water, milk, butter, sugar, and salt to a boil.
  2. Whisk in flour and once incorporated stir with a spatula for 1-2 minutes.
  3. Pour mixture into a mixer fitted with the paddle attachment and add the whisked eggs gradually. You may not use all the eggs. Pull the paddle out and if the batter makes a “v” you are ready.
  4. Pipe onto a parchment lined sheet tray.
  5. Bake at 345 degrees for about 20-30 minutes, opening the oven (for about 10 seconds) to let out excess steam after you see the product rise and start to sweat.
  6. After pastry had cooled, cut in half. The center should be hallow.
  7. Fill with whipped cream or lemon curd.

You may also dip or drizzle with chocolate ganache.

Basic Ganache recipe

Chocolate 300g

Cream 300g

  1. Heat the chocolate in a microwave safe bowl until it is about half melted.
  2. Heat the cream on the stove until it just comes to a boil.
  3. Pour the hot cream over the chocolate and allow to sit for a moment.
  4. Whisk cream until chocolate and cream are fully emulsified and glossy.

Happy baking!

Think Outside, No Box Required

When springtime warms the air and our thoughts turn to planting, it’s time to dig in the dirt. For starters I purchased some fragrant lavender topiaries for my front porch, I have to smell them every time I walk by.

I also found some great garden accessories that are sure to beckon you outside!

Best part, they are shipped right to your door.

gardening set

The Vremi 9 piece Garden Tool Set includes everything you need to get started.

A favorite, the Crenova Spray Nozzle makes watering your flower pots easy and fun.

gorilla cart

The Gorilla Cart makes any job in the garden easier.  Great gift for dad too!

garden set with stool

For some serious comfort while weeding or planting, how about the GardenHome 7 piece Garden Tool Set which includes a stool!

And my all time favorite.  The two-way hose connector splitter.  I love it because I can have a short hose for the pots on my porch and a long hose for the front lawn flower beds.  That way I don’t have to roll up the long hose every time I water.

Happy planting to all.  May your flowers bloom to perfection and your vegetables taste ever so yummy!

Inspiration, quote of the week

A Little 2017 Salt Sky Change

This past week, as is customarily done at the beginning of a new year, I have been reviewing some of my work, reviewing my goals, and reconsidering priorities. Since I was 15 years old, I worked in the family businesses and followed in my mama’s footsteps. Though lately it has become more difficult to do all that I dream of doing.

Admittedly, the business planning is draining and I felt a little down. One day, I was listening to the radio when a Tim McGraw song came on, he sang, “Bitterness keeps you from flying, always stay humble & kind.”

This prompted me and I decided to turn to prayer (which I really should have started with).  I can’t say I very often get distinct answers to my prayers; instead, I get feelings that help me as answers to my prayers.  This time, however, my answer was clear, like someone was talking to me.

It’s not my time was the answer, simple as that.  My time now is to get my home in order and focus on my children.  This seems like an easy answer, which I should have come up with on my own.

Let me give you a little background on me.  I’ve been able to juggle home, family, and business over the years and occasionally I have been met with harsh criticism from others.  I enjoy working. I like being creative. I want to feel like I’m helping my spouse and contributing to my home.  I don’t like being told I can’t do something.  While doing all of this juggling, our family has been happy and we’ve been blessed in many ways.  So you can see how this answer wasn’t what I was expecting.

I’m putting all my faith and trust in this answer, It’s not my time.  It’s time for me to think of my kids before myself because who knows what the future holds.  There’s a quote that says, “If the train doesn’t stop at your station, it’s not your train.”

This week I hope we can all find our train or if you’re like me, recognize that it is time to be taught patience and find peace in doing other important things.

This blog will continue to go on because it’s something we enjoy doing together, though in keeping with my answer to prayer, I will be dedicating more time to home and family. Salt Sky will be posting twice a week from now on. We hope you find posts that uplift you, help you, and inspire you to create and spread a little joy. And that you will continue to follow along in 2017!

Nailed it!
Christmas, Inspiration

Nailed it!

During a season of best smiles, picture perfect families, sparkling decor, incredible meals and presents (Pinterest wrapped to perfection); let’s remember the reason for the season.  That just being together is the best and sometimes when you’ve nailed your family Christmas card, like we have, you laugh and realize that you’d take this perfectly imperfect family any day because we’re super blessed to have each other.

With the busy rush of the season, we hope you’ll remember what matters the very most and take a moment to slow down and celebrate it.

Plate of the Month Club

This is too much fun to not pass along to our Salt Sky friends!

I just joined the “Plate of the Month Club” at New Orientation.  This beautiful store has the most elegant and unique dishes around, and I happen to have a love affair with dishes.

When I found these handpainted Christmas dishes I was instantly drawn to them, but if I came home with an entire set, my husband would probably have a heart attack.  So I joined the club!

This is how it works:

You go into New Orientation (1400 Foothill Drive #162, Salt Lake City)

Choose your dishes. There are so many choices.

Give them your credit card which they will safely store and every month they will charge you for one dish.  On the day that you choose, they will run your card and call you and let you know that it is all wrapped up and ready for pickup.

My set is so sweet and delicate, it is called Reindeer Games.  Each dish is of a different sport.  Dasher is one of my favorites because we like to ski.

To see the full set of these dishes, visit our friends at New Orientation.  It is a good idea to not take small children in as well as strollers, there are too many breakables.  This store is a must visit, there simply are too many beautiful treasures to enjoy.
