This past weekend we had the best time horse back riding in the foothills overlooking the beautiful city of Salt Lake.

Our friends at Utah Trail Rides were so much fun and since some of us are pretty rusty at the sport, they were very patient and helpful.

Just imagine riding out of a barn full of beautiful horses, past an apple orchard, through a street lined with historic buildings, and onto a path just below Bonneville Shoreline Trail. You can see the whole city and the vista is spectacular.

Utah Trail Rides is owned by a very handsome cowboy from Arizona that now calls Utah home. The business has grown so much in the past two years that they are booked around the clock. So much so that they are expanding and buying more horses just to keep up with the demand. And we love that!

We are so excited to go back! Next time we will take our husbands. Just picture a romantic couple ride, can’t wait.

But book your appointment ahead of time because they fill up fast.

Time to get away to Capitol Reef

A little piece of heaven is waiting and it’s just 3 hours away from Salt Lake.

Last week we visited wonderful Capitol Reef, took the scenic highway with it’s stunning vistas, hiked to marvelous destinations and relaxed at Capitol Reef Resort in their beautiful and super comfortable rooms.

Did you know you can even stay in a teepee complete with king size bed, flat screen TV, sitting area, and full a private bathroom just a few feet away? We stayed in a comfortable and well decorated room but next time we go it will be a teepee!

A delicious pioneer breakfast buffet is included if you choose that option and the service was great.

Capitol Reef, Utah

For dinner we visited Café Diablo, I highly recommend it. The food was so incredibly delicious that you have to make sure you experience it. Café Diablo is under the ownership of a friendly former cowboy from Philadelphia who loved Utah so much he made it his home. He greeted us dressed in shirt and tie, made excellent recommendations, took our order and served us our wonderful meals. This unique restaurant even grows it’s own organic greens, everything is fresh and tastes out of this world.

Make sure you try the avocado chips, deep fried avocado that has been breaded and cooked to perfection.  The dip is a cheese sauce that perfectly compliments the avocado.

Take a moment to see the local art that hangs throughout the cafe. I loved this hand carved wood piece.

Don’t forget to visit the little town of Fruita nearby, it’s charming and full of history.

As we drove in, we were greeted by a heard of deer, a flock of wild turkey and the friendliest of people. Stop by the visitor center for a short video presentation, walk through the fruit orchards and pick some fruit to take home. We were there too early in the season but the trees were blossoming and it was beautiful.

The little country store sells really yummy ice cream that we had to try, as well as gifts and souvenirs. Make sure you stop by the barn across the street to pet the horses and drive to the original one room school house, peek inside, it’s sweet.

On that same road just a skip away you can see petroglyphs left by the Fremont culture, which existed in areas of Utah from approximately AD 600 to 1300.

Penguin Brother grand opening

Last summer we had some unreal ice cream sandwiches from Penguin Brothers.  Their delicious ice-cream sandwiched between 2 cookies was heavenly!  We are so excited for the team of brothers that this weekend is adding to their bright pink food truck success a new shop in Provo.

Join them tomorrow for their grand opening and support a good cause along with it.  All proceeds of the night will go to Rheumatic Rescue, a cause that is very important to their family.

Wishing the Penguin Brothers good luck and congratulations on their new exciting endeavor from all of us at SALT SKY!

You KNEAD a Kneaders pastry

This past week we had the opportunity to take a pastry class from none other than Monica Kate, executive head pastry chef for Kneaders Bakery & Cafe.

We met up with some of our blogger friends and had a super fun group there as we attempted to learn to make delicious puff pastry.  The best part is that they have allowed us to share their own recipe with all of our Salt Sky friends!

Here are some fun facts about Kneaders and why we love them:

Kneaders is celebrating 20 years in business; they started with a small store in Orem and have grown to 57 stores in 6 states.

They are a “from scratch bakery” and make 42 different types of pastries daily by starting as early as 4:00 am.

Their kitchen’s high sanitation standards are impressive, everything is sanitized every 2 hours!

When we were there, the bread chef had 400 pounds of dough rising.  Some days they make up to 1000 pounds.  You better believe that they sell out of their delicious bread daily.

We love that this very successful business was started by a husband and wife team with a dream.

PATE A CHOUX (pronounced Pat a Shoe)

Kneaders Puff Pastry recipe

Ingredients:

1 cup water

1 cup milk

1 cup butter

1 tsp. sugar

1 tsp. salt

1 ¼ cup flour

10 eggs whisked

Directions:

  1. Bring water, milk, butter, sugar, and salt to a boil.
  2. Whisk in flour and once incorporated stir with a spatula for 1-2 minutes.
  3. Pour mixture into a mixer fitted with the paddle attachment and add the whisked eggs gradually. You may not use all the eggs. Pull the paddle out and if the batter makes a “v” you are ready.
  4. Pipe onto a parchment lined sheet tray.
  5. Bake at 345 degrees for about 20-30 minutes, opening the oven (for about 10 seconds) to let out excess steam after you see the product rise and start to sweat.
  6. After pastry had cooled, cut in half. The center should be hallow.
  7. Fill with whipped cream or lemon curd.

You may also dip or drizzle with chocolate ganache.

Basic Ganache recipe

Chocolate 300g

Cream 300g

Directions:

  1. Heat the chocolate in a microwave safe bowl until it is about half melted.
  2. Heat the cream on the stove until it just comes to a boil.
  3. Pour the hot cream over the chocolate and allow to sit for a moment.
  4. Whisk cream until chocolate and cream are fully emulsified and glossy.

Eating healthy generally takes away everything we like and two things we can’t live without… sweets and bread.  We tried giving up sweets and that lasted less than 24 hours so we started thinking of smarter sweet choices because life is to be enjoyed, right?

Well it was like angels singing when Halo Top Creamery sent us their fabulous ice cream to try.  Halo Top ice cream is only around 250 calories for the ENTIRE pint!  Halo Top has less fat, less carbs, more protein and less calories than most ice cream out there.  (Click HERE to see how they compare) With all that being said, the taste is still SO amazing.  It’s a guilt free dessert.

Halo Top says:  “We use organic stevia. Stevia is a plant native to Paraguay that’s been used to sweeten foods and beverages for more than 200 years. And, because it’s so tasty, we use it as a sugar replacement. We also use Erythritol, which though it has a rather scientific-sounding name, is actually another all-natural sweetener found in fruits like pears and grapes. Though it’s technically a sugar alcohol, it’s unlike the others because erythritol doesn’t affect blood glucose or cause bloating.”

Our Favorite Home Fabric Shop

Do you like to decorate your home with great pillows and upholstered furniture? You will not believe the great prices and gorgeous fabrics you will find at The Fabric Store.  They recently opened in Draper.

Kat Rodgers Peterson and Korri Dahlman are the mother daughter duo business owners of this fun shop.  They are knowleageable and super helpful!  They helped us choose fabric for a king size duvet, couch pillows, a fireplace cushion, a table runner and new dinning room curtains.  Yup, we’ve all been doing some really fun spring touches all over our homes.
